Blanc de Blancs. White from whites — the classic Champagne method, made entirely from Chardonnay grown on 40-year-old vines in Broke Fordwich.

Secondary fermentation in the bottle. Two years on lees. Riddled and disgorged by hand. The result is everything a great sparkling should be — citrus, green apple and grapefruit on the palate, a creamy mousse, a fine elegant bead, and a finish that doesn’t rush.

Limited to 1,000 bottles. Available at the cellar door and online.

À Votre Santé [cheers]

Le Fruit Défendu [The forbidden fruit].
Our Wine Club’s most requested wine.

The 2024 Pinot Syrah is a blend that carries real history, on both sides of the bottle.

The Pinot Noir is clone MV6. Short for Mothervine 6 — cuttings reputedly smuggled out of Clos de Vougeot in Burgundy by legendary Hunter Valley winemaker Maurice O’Shea, planted at Mount Pleasant, and eventually propagated by the CSIRO into the clone that now runs through more than half of Australia’s Pinot Noir vineyards.

The Syrah traces its lineage to the original Hermitage hill in the northern Rhône — the same Scyras cuttings James Busby brought to the Hunter Valley in 1832.

Two varieties. Two acts of wine world larceny. One bottle.

75% Pinot Noir MV6. 25% Syrah. Six months in 500L French oak. Violet petals, dark cherry, a whisper of anise — and a finish that lingers with quiet authority.

Silver Medal — Australian & New Zealand Boutique Wine Awards, Red Blends.

Limited to 2,600 bottles. Available at our cellar door and online. Link in bio.

À Votre Santé [cheers]
